When I opened this wine yesterday, I didn’t think that much of it. It had some typical Chardonnay yellow apple, some vanilla / oak, a little green apple with some SweeTart character, and a strange flavor I couldn’t quite identify that seemed close to sulfur. Overall, it was a mild and dull wine that I was tempted to give Thumbs Down but which, more honestly, was Drinkable.
This afternoon, the rest of the bottle (stoppered with its cork and kept in the fridge) showed pretty much the same flavors, but it had become more aromatic, delicate, lively and accessible, a joy to drink instead of being aesthetically offensive. Some of the “strange flavor” seemed close to golden kiwi, but was maybe still a little sulfurous. So.. a solid Drinkable.
